Zucchini Patties

2 cups shredded zucchini
2 eggs
1/2 medium onion, diced
1/2 cup flour
1/2 cup shredded Parmesan
1/2 cup shredded Mozzarella
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
3 TBL vegetable oil or olive oil
Combine the zucchini, eggs, onion, flour, Parmesan, Mozzarella, and salt in a medium mixing bowl until the ingredients are mixed evenly. Heat oil in a heavy bottomed frying pan over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls and then flatten down with a spatula to form a patty shape. Cook the patties for a 4-5 minutes on each side or until golden brown. Remove from pan to either a wire rack or a plate with paper towels to remove excess oil before serving. So addicting!
Optional: dip in ranch dressing or top with salsa.
