Shrimp cocktail

Ingredients:
2 Lbs medium shrimp, shelled, deveined and tails removed
2 celery stalks, (sliced thin)
1 Jalapeno, (seeded, finely chopped)
1 Cucumber, (chopped)
2 Avocados, (peeled, pitted, chopped)
1 small white onion, (finely chopped)
2 Limes, (juice and zest)
1 Orange, (juice and zest)
11.5 ounce can of tomato juice
1/2 cup of tomato sauce
3 – 1oz jiggers of vodka
2 garlic cloves, (grated)
Favorite Hot Sauce, (to taste)
Salt and Pepper, (to taste)

Instructions :
Bring large pot of lightly seasoned with salt and pepper water to a boil.
Add the shrimp and boil until shrimp curl into a loose ‘C’ shape and are cooked through.
Time will vary depending on the size of the shrimp.
Drain and transfer to ice bath, or run under cool water to stop the cooking process.
In large bowl combine the shrimp, celery, jalapeño, cucumber, avocado and onion.
In separate bowl combine the lime juice, orange juice, tomato juice, tomato sauce, garlic, hot sauce, vodka, salt and pepper and mix thoroughly.
Pour the mixture into the bowl with the shrimp and vegetables and combine.
Arrange everything in a large cup with a few ice cubes or crushed ice, mixing to combine.
Or you can chill for at least an hour, then serve.
