Sheet Pan Tacos

Ingredients:

3 tablespoons vegetable oil 2 cups onion chopped 3 pounds lean ground beef 3 1 oz packages taco seasoning 1/4 cup fresh lime juice 16 8-inch flour tortillas 3 diced tomatoes 1/4 cup cilantro chopped 4 cups Mexican blend cheese Pico de Gallo optional Sour cream for serving, optional

Instructions:

Heat the oven to 350° and spray a 13×18-inch rimmed pan with cooking spray. In a large skillet, heat the oil and add the onions. Cook for 4 minutes, then add the hamburger and cook till no longer pink. Stir in the taco seasoning and lime juice. Line the baking pan with 10 tortillas, making sure that they overlap and hang out of the pan about halfway. Place 2 to 3 tortillas down the middle to make sure there are no gaps. Spoon the meat over the tortillas, top with tomatoes, cilantro and cheese. Place the remaining tortillas, overlapped down the middle of the top, then fold the tortillas over the top to seal in the meat. Place another large pan over the top to hold the top in place. Place in the oven and bake for 30 minutes, until the tortillas have browned lightly. Remove and cut into pieces. Top with sour cream and pico de gallo.
