Chicken (or Turkey!) Fritters

Ingredients:
•2# ground chicken/turkey, thawed (I used 1# of each)
•2 eggs
•2 cups bread crumbs (add more if not sticky enough)
•1 cup shredded cheese, mozzarella or other white cheeses taste best!
•1/4-1/2 cup grated Parmesan cheese(depending how cheesy you want it)
•Red Pepper flakes to taste
•Garlic & onion powder, salt, black pepper to taste.
•1/4 cup corn starch, this helps the crispness.
Instructions:
•Heat skillet to medium heat, add butter/oil/fat to pan and wait until sizzling hot before cooking fritters.
•Mix all ingredients together in mixing bowl, until sticky and well combined. Should be able to be formed into a ball, that’s the texture you’re going for!
•Grab a spoonful of the fritter mix and form into a ball. Place in hot skillet, and mash into a patty shape.
•Cook until golden brown, about 6-7 minutes. Do not flip too early or they will stick!
•Flip and cook other side about 6-7 minutes until golden brown.
That’s all it takes!! I dip these in my favorite dipping sauces and serve with baked potatoes and veggies.
