Vegetable croquettes: quick and easy to make!??❤️

INGREDIENTS

– 1 kg of potatoes
– 200g carrots
– 200g peas (can be frozen)
– 200g green beans (can be frozen)
– 1/4 cup chopped parsley
– salt
– pepper
– 2 eggs
– 100g of parmesan
– 3-4 eggs, beaten
– 2 cups of breadcrumbs

METHOD

Boil and peel the potatoes and carrots.
Cut carrots, green beans.
Mash the potatoes, add 2 eggs, salt, pepper, parmesan.
Add carrots, peas, asparagus beans, parsley.
Form into balls and press with a flat cup bottom
Dip in egg, then in breadcrumbs and fry until golden brown
