This Hearty Chipotle Chicken Soup is just what you need to warm up! ️ Packed with veggies, tender chicken, and a smoky chipotle kick.
Ingredients:
1 tbsp olive oil
1 lb boneless, skinless chicken breasts, diced
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
4 cups chicken broth
1-2 chipotle peppers in adobo sauce, chopped (adjust to taste)
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Directions:
In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove and set aside.
In the same pot, add the onion, garlic, red bell pepper, and zucchini. Sauté until softened, about 5 minutes.
Add the black beans, diced tomatoes, chicken broth, chipotle peppers, cumin, and smoked paprika. Stir well to combine.
Return the chicken to the pot, bring the soup to a simmer, and cook for 15-20 minutes, allowing the flavors to meld.
Season with salt and pepper to taste. Garnish with fresh cilantro and serve with lime wedges.
