Chunky Tomato and White Bean Soup

Tomato and white bean soup is a comforting dish that brings warmth to any chilly day. This rustic, chunky soup is a staple in many homes, especially in the Midwest, where hearty meals are a way of life. The combination of tomatoes and white beans creates a saucy, flavorful base that’s both nourishing and satisfying. It’s perfect for family dinners or a cozy gathering with friends, offering a taste of home with every spoonful.
This soup pairs beautifully with a crusty loaf of bread or warm, buttery cornbread. A simple green salad with a light vinaigrette can add a refreshing contrast to the rich flavors of the soup. For a heartier meal, consider serving it alongside a grilled cheese sandwich or a baked potato.
Chunky Tomato and White Bean Soup
Servings: 6
Ingredients
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
2 cans (14.5 ounces each) diced tomatoes
4 cups vegetable or chicken broth
2 cans (15 ounces each) white beans, drained and rinsed
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Directions
1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
2. Add the carrots and celery to the pot, and cook for another 5 minutes until they begin to soften.
3. Stir in the dried oregano, dried basil, and red pepper flakes, if using. Cook for 1 minute until fragrant.
4. Pour in the diced tomatoes and broth, and bring the mixture to a boil.
5. Reduce the heat to a simmer, and add the white beans. Let the soup simmer for 20-25 minutes, allowing the flavors to meld together.
6. Season with salt and pepper to taste, and stir in the fresh parsley just before serving.
Variations & Tips
For a creamier texture, you can blend a portion of the soup and then stir it back into the pot. If you have picky eaters, consider adding some cooked pasta or rice to make it more filling. You can also add cooked sausage or chicken for extra protein. For a vegan version, ensure the broth is vegetable-based and skip any meat additions.
